Zesty Lime Garlic Chicken
Preparation is everything to dishes that are a step up above more ordinary fare and this is no exception. I used to steer clear of recipes that you couldn't start preparing now, and be completely finished cooking, eating and having the dishes put away 3 or 4 hours from starting at the most. Now my tastes are getting a little more refined and anything food, that's different and new, appeals to me as well as the old standby comfort foods and traditional dishes. I constantly experiment now with new spices and ingredients to create meals that are different and more flavorful.
Marinades impart a rich flavor that can infuse the meat thoroughly, giving it a richer flavor and it tenderizes any meat at the same time. Particularly if the meat is marinaded overnight. While there are, packaged instant marinade mixes, you can save a lot of money making your own. You don't need a whole lot of expensive ingredients on hand to make a great marinades from scratch yourself. Olive or Vegetable Oil, Lemon and Lime Juice, Soy Sauce, Vinegar's, Balsamic, Red Wine, or Cider Vinegar, Honey, Worcestershire sauce. All these qualify to make a marinade. Add some garlic and a few spices and you're good to go.
Recipe Ingredients :
Boneless Skinless Chicken Breasts
1/2 Cup Lime Juice
1/4 Cup Cider Vinegar
2 Teaspoons Fresh Ground Black Pepper
4 Tablespoons Fresh Minced Garlic
2 Tablespoons Dried Oregano Or 2 Teaspoons Fresh Oregano
1 Tablespoon Of Coriander
2 Teaspoons Dried Chilies, Optional
1 Teaspoon Salt
1/4 Cup Oil
1 Teaspoon Paprika
For the Marinade
Combine Oil, Spices, Lime Juice and Vinegar in a resealable freezer bag or in a bowl you can seal tightly overnight in the fridge. Add the Chicken to the bag and carefully shake and turn bag and work marinade into the meat until covered. Refrigerate overnight and until you are ready to prepare.
To Cook
Take your chicken out of the marinade and discard the marinade.
Preheat a lightly oiled skillet to medium high and place the Chicken in pan.
Brown the Chicken on all sides, searing it to seal in the juices.
Take out of skillet and add it to a greased baking pan and bake in a preheated oven uncovered at 375 Degrees for 35-40 minutes.
Serve with Wild Rice and French Cut Green Beans
For a variation of this recipe, try adding some slivered almonds into the skillet when the chicken goes in.
